Wild Cherry Liqueur
Pump House Spirits Co. (founded by a former bartender) have handcrafted a wild cherry liqueur in Exmoor, Somerset using foraged fruit.
They harvest the wild cherries from a neighboring field and macerate the whole fruit, including the stones, which adds a bittersweet almond note. After just over a month the product is strained to remove the cherries then they bottle by hand; there is a slight sediment in the liqueur as a result, although this will settle to the bottom if the bottle is left standing.
Aromas of marzipan and cherry pie lead to a delicate sweetness followed by lingering almond notes. Sip straight – with, or after, dessert – or try out your mixology with their cocktails.
