Grape: Encruzado 65%, Cercial 35%
Tasting Notes: The juice is fermented in cement vats and then spends 3 months in oak for a smooth and rich mouth-feel. With a bright yellow colour, the nose and palate bursts with fresh citrus notes and hints of nuts and spices which is balanced by a refreshing acidity and an elegant finish.
Food Pairing: Ideal with fish dishes.
Adega de Penalva do Castelo is a Dão winery revived by Abegoaria, the winemaking project of the Bio family. Originally from Alentejo, Ana and Manuel Bio have invested in Portugal’s wine heritage; modernising facilities, and revitalising wineries in historic wine regions. Penalva`s wines are made using traditional grape varieties grown on the region’s rugged granitic terrain by local farmers in the district of Castendo. The protection of the Serra da Estrela and location at 500m altitude creates a generous microclimate and distinguished wines.
