Appellation
Three years ageing on Champagne yeast lees create Champagne-like texture and complexity, while the meticulous selection of vibrant, sharp apples from old trees reaching deep into the sandstone below give this cider fresh lemony acidity and salinity.
Roughly half of this cuvée was matured in 300ltr French oak barrels while the other half was matured in stainless steel before bottling with Champagne yeast.

Each of our Traditional Method Fine Ciders are made from a field blend of apples from unsprayed traditional Devon orchards. Varieties are chosen for their bright, fresh acidity, alongside a handful of sweet Devon cider apples to smooth & round. These undergo a spontaneous primary fermentation before secondary fermentation with champagne yeast and a further two plus years maturation on the lees in the bottle before being hand riddled and disgorged.

Best enjoyed well chilled, from a flute or tulip. The perfect accompaniment to shellfish, particularly Devon crab and lobster, mussels and oysters. Also pairs very well with spicy foods and mature, clothbound cheddar.”
