“Pristine fruit from our Elgin vineyards was transported in a refrigerated truck to our winery and every measure imaginable was employed to ensure minimal oxidation. One third of the batch was given 24 hours’ skin contact; a second portion crushed and pressed immediately and the third and final batch was whole-bunch pressed.
The juice was tank fermented at low temperature to retain vibrancy and freshness, with eight months post-fermentation lees contact at low temperature adding some richness and texture to the midpalate. As with most endeavors in life, a final touch is often necessary, this coming in the form of a dollop of Semillon and Old Vine Chenin Blanc.”
